if you wanted to start a company to take care of the elderly in there home. How would one get this started.?
I would eventually like insurance companies to be able to send clients to me. I would only be able to care for 2 or so.

Basically you put an ad in the newspaper announcing your services. There are tons of adult children looking for people who will check in on their elderly parent. Duties you might advertise are personal care, housekeeping, laundry, shopping, transportation to drs., companionship, etc…
You do not need any formal training or certification. If you do already have training, however, be sure to list it in the ad (RN, CNA, RA, etc..) as certified care givers can demand more money than non-certified.
I would suggest that you do this as an individual or sole-proprietor and not set up an official "company". Less taxes, less paperwork, less government. You should, however, look into getting bonded – it's insurance just in case an employer isn't happy with your services or accuses you of stealing something. Most service-type workers who go into other people's homes are bonded.
If you do decided to form an official "company" you should check with your state's Department of Human Services. Most states have formal rules and guidelines (and require license) for companies that advertise "home health care".
Best wishes!
